Memory, Sorrow, and Thorn
A four-book trilogy set in a world where winter brings supernatural horrors from the frozen north as the south struggles with politics and a mad king who sits upon a special throne built from dragon bones, commemorating the victory that established their house's supremacy in the land. Our protagonist is a distractable lad who enjoys climbing and wild tales. Our antagonists are immortals in the north come to wipe us out once and for all.
GRRM has acknowledged it as the direct inspiration for his own seven-book trilogy.

I read either some or all of Memory, Sorrow and Thorn years ago and thought it was interesting but didn't quite love it. I may have to reread some day. Tad Williams wrote a bunch of other stuff, some of which I've tried. I really enjoyed his standalone The War of the Flowers, set in a faerie world where the high ranking people are all based on some kind of flower.
This came up the toher day but I read a2/3 of the Redwall novels and was obsessed with them for years before realising the plots were all samey and getting bored.
I am a particular fan of the Temeraire novels which features a dragon air force in the Napoleonic era. There are a whole bunch of dragon breeds, usually divided by nation. The author takes her heroes all over the world to show how various countries s treat dragons. For example in Britain, France and Prussia the dragons are raised to military service but in China dragons are treated in a similar way to people, with jobs, and some breeds are too highly prized to fight.
Bernard Cornwell's a prolific author with a whole bunch of books/series. I am a particular fan of his King Arthur trilogy and his Sharpe novels but he has some other great ones too.
