Since I am running the first job I am going to start getting ready, and for the first job your band of Mercs have been hired by the Volantenes to go and defend the small Settlement of Lyrica. This job will take place within a couple years of the Doom, during the time that Volantis is a rising power.
Lyrica is run by a Valyrian Magistrate. It lies atop an ancient road that runs through a small pass through the mountains separating the Dothraki sea and the civilized lands. There used to be an iron mine in the hills but it has been exhausted for years now. Only the pass, and the trade that passes through keeps the settlement alive. Yet the keep and lands are important to the Volantenes as a way to keep Dothraki raiding to a minimum.
You guys are going to be stationed in the area for a while so I figured I would use you guys to help develop the town and surrounding areas. The things I know about the keep is that it is small, and it is run by a Magistrate for Valyria. There are two roads, the one that runs through the town walls, and the other that winds up into the mountains that feed the mine. There is a large barracks, large enough to hold five thousand men, but only five hundred remain. Most were Valyrian and returned home after word of the Doom reached them.
So that is what I have as of now. What we need to develop is a map of the area, and the names of the people who live in and around the Keep.

From your description it sounds like this place is gonna be a ruin, sort of like the Leptis Magna in Libya en.wikipedia.org/wiki/Leptis_Magna. Lots of impressive stonework and arrid climate, that is completely unreflected of the current inhabitants, who I would imagine would be whoever is working with the magistrate to keep order, and the either now destitute mine workers and operators, or a lot of slaves and unemployed wretches. So big place with a lot of sparse people. Hope that helps at all.

How many inns are there? And who runs them?
What is the Magistrate's name, how large is his family? How many servants and functionaries would he have working for him.
What is the name of the town smith? And his apprentices? What other shops are here and who owns them?
Who commands the remaining soldiers? Do the walls circle the whole town, or block the road?
How many farms are there around the town? Do they favor crops or domesticated animals?
Is there anything I am missing?

Tourism will be low, and though traveling merchants will bring in money, it's not going to be so constant to be a booming business. With the town so small, it's likely run by old mining families, and everyone knows eachother. His name is Stevron, his apprentice is a half-Dothraki named Arzo whose mother was raped in a raid, and his mother cooks at the Charred Fish, a popular tavern.Who commands the remaining soldiers? He murdered Arzo's father, which earned him much reknown. Walls circle the town, but it;s clear they have not been as well-maintained as they should. It's clear they were built in a time when the Dothraki feared dragonfire more than earthenstone.How many farms are there around the town? Do they favor crops or domesticated animals? The town smith is an ex-soldier, not of Valyrian stock, but a mutt of all the blood of Essos. Aleppo One-Hand is a big man, as smiths tend to be, of about two and forty years of age, and stands well above six feet tall. He is bald and has dark skin that is usually coated with a light layer of soot. He is, shockingly, one-handed, and needs an apprentice to hold the iron with tongs while he works it, but is still quite impressive in his work, especially for a small nothing town like the dying Lyrica.
First among the apprentices is Aleppo's bastard son, Simeon Dragoneye, who looks like a younger version of his father but with the bright violet eyes of a Valyrian dragonlord. Rumor has it that his mother was a highborn lady, but there are plenty Valyrian women who are lowborn as well. He is about twenty years of age and has seven gold rings in each of his ears.

From your description it sounds like Lyrica is isolated, and with the exhausting of the mine, much diminished. It does not sound like a plush post for a Valyrian magistrate. Perhaps the magistrate of this town was on the down and out with the capital, and sent to Lyrica as a soft sort of exile? Once the Doom came and everyone in Valyria proper died, he swore over to Volantis because he knew the town didn't have nearly the strength or wealth to defend itself on its own. He might have conceivably taken his family with him, a wife and two or three teenaged or young adult children, maybe?
